Sparkling Wine Schloss Gobelsburg Brut Reserve. Drink it now. No need to decant. Located in the Austrian Danube region, the Schloss Gobelsburg winery has a very ancient history closely linked to that of the Cistercian monastery Zwettl. The production focuses on the Grüner Veltliner and Riesling grapes, cultivated in vineyards located on barren slopes and terraces in the Kamptal wine region near Langenlois and Gobelsburg. The typical character of Schloss Gobelsburg Brut Reserve derives from the stimulating freshness of the Danube region, the high altitude vineyards, and the varietal characteristics of Grüner Veltliner, Riesling, and Pinot Noir. Grapes are collected in small boxes when perfectly ripe and immediately pressed. After 6 to 12 months of aging in barriques, the wine is bottled for a second fermentation. It rests on the lees, which contributes to its creamy consistency, for 2 or 3 years before being disgorged. In the glass, it shows a beautiful golden color with silver reflections and elegant effervescence. The aromatic profile, which is intense and complex, shows a hint of straw and hay, and then characters of yeast and toast, with delicate citrus notes on the finish. In the mouth, the lemon flavors come back, but the palate is round and harmonious with fresh and lively foam and vibrant acidity. It goes beautifully with fish and soups, but is also delicious on its own as an aperitif.

Sparkling Wine Lothian Vineyards Methode Cap Classique Brut Rose. Cap Classique is South Africa’s answer to Champagne, an elegant sparkling wine that is made according to the traditional method with a secondary fermentation in the bottle. Using the same technique that is used for Champagne helps create delicious toasty brioche notes, tiny bubbles and a silky smooth texture on the palate. This version is crafted from Pinot Noir grapes which gives the wine a beautiful salmon hue and inviting notes of fresh strawberries, raspberries and red cherries. The wine is fermented in the barrel and then aged on the lees in the bottle for 18 months before disgorging. The result is a rich, creamy mouthfeel with ample bright red fruit flavours and delicate bubbles which seem to melt away on the tongue. The crisp flavour profile makes this a great aperitif or partner for cheeses, charcuterie and all manner of salads and seafood dishes. Lothian Vineyards is owned by the Wilson family who have been making wine on the Cape for three generations. With support from talented head winemaker Richard Kershaw who holds the revered Master of Wine title, Owners Gavin and Ewen have adopted a Burgundian approach to winemaking with a focus on purity of flavour and exceptional quality across their diverse range of wines.

Sparkling Wine Allimant Laugner Cremant d’Alsace Rose. Domaine Allimant-Laugner was born out of the marriage of Mariette Allimant and René Laugner in 1965 which joined together two of Alsace’s top winemaking families. The estate boasts 12 hectares of prime vineyards and is currently run by three generations of the Allimant-Laugner family who have been making wine for at least 11 generations. The family’s Cremant d’Alsace Rosé is a style which is growing in popularity and it’s made using the traditional method which is the same winemaking approach used for Champagne. The Pinot Noir grapes are gently pressed after a short maceration to create the gorgeous pale pink colour and the must is then fermented twice. The second fermentation takes place inside the bottle and the wine is aged on the lees to add extra complexity and body. As soon as you pour yourself a glass you’ll notice the delicate stream of tiny bubbles and inviting aromas of fresh strawberries, cherries and white flowers. The first sip reveals a bright acidity, smooth mousse from the bubbles, and enticing red berry flavours with a very clean and pure finish. The vibrant character of this Cremant makes it ideal as an aperitif or served alongside spicy Asian cuisine or fresh seafood.
